Stifado

A traditional Greek stew, Stifado has a special relationship to Corfu, where it is a mainstay of the local cuisine. Usually made with beef or rabbit, this meal is slow-cooked in a rich, fragrant sauce that includes onions, vinegar, red wine, and a number of spices including bay leaves, cloves, and cinnamon. The lengthy cooking period enables the meat to absorb the rich aromas of the sauce and become soft. With its origins in Venetian cuisine, Stifado highlights Corfu’s history of fusing Italian and Greek cooking techniques.
